Required software development freelancer for SaaS app penetration test, network mapping job

I am trying to map the architecture of a SaaS application. The end user is either interfacing via web browser or a desktop app that is phoning home to either a company server or Azure/AWS Clouds.

We want to investigate how the application works, analyzing its public API exposure (servers, ports, IP address, DNS servers, etc.). We do not want to penetrate an application, merely understand how it works and then ask questions.

Once we know the topography, we will next want to hone in on what's out there and investigate further.

I'll give you an example. App ABC. It's an application that can run on your desktop or run in the desktop web browser. Maybe this runs in a company owned data center or on AWS. How does Ap ABC phone home? Once we know this, can we ask some questions of it?
