Required Alexa Skill Kit,Microsoft Excel freelancer for Alexa Skill for entering patient behavior data into database via voice job

We would like to create an Alexa skill where staff could record behavior data for our patients we serve via an Echo device using their voice. Once they activate the skill it would prompt them for each field of data needed and record it on a spreadsheet. We would need to explore any patient privacy (HIPAA) concerns and the fields required to later upload into our care software.
