Background information: I run a language learning company in France. The basic setup is that I meet people who are interested in our services ('clients'), if they decide to use our services we set up a dossier with their estimate, program and contract ('dossiers'). With my limited programming knowledge and some outside support, I created a Livecode application/database that does this, but it's mickey-mouse and I don't have the knowledge or the time to expand it (baby #1 on the way next month). So we're looking at alternative online solutions right now, Zoho caught our eye, reviews are mixed but it looks promising, if you have other suggestions I'm open to it, I'd like to find something customizable for less than 100 euros a month, but of course quality is everything.

Looking for a Zoho Account that does the things I need it to do:
Clients - basically leads/contacts, mostly set up already but I'd like to know how to set default information in fields, too, to save time... It would also be a bonus if when people visited our website, the information they shared in the form could autopopulate a client field
Dossiers - separate table, and each dossier is linked to a specific client (a client can have multiple contracts)
Products - separate table, individual products linked to the dossier
Documents - autopopulate various templates with information from dossier and linked clients, products, and students; after approval, these become PDFs that need to be signed or stamped
Teachers - separate table, individual teachers can be linked to a dossier
Students - separate table, create students for a dossier, default contact information is the client (when the client is the student) but can support multiple students (example: a group class)
Financers - separate table, link key documents to financers, link a financer to a client OR a dossier
Sessions - can be set up between teachers and students independent of company administration, but within specific limits (e.g. total teaching hours, location availability, teacher availability) - must be confirmed by both parties - teachers/students should be able to see information regarding past sessions (e.g. content that was covered, level evaluations, teacher-only notes)
Reviews - students and clients can review sessions and teachers
Locations - a table for rooms, availability limited to office open/close hours
Banking/accounting setup, if we have time - able to automatically download account transactions from the bank website, link specific transactions to specific contracts
As we're a young business (3 years), things are still constantly changing, and we have a small-ish budget. After you've set up the basic table relations, I would like to be able to make MINOR adjustments to things, adding new templates/fields/etc., but the major structure should more or less remain intact (or I would rehire to add new major features). So ideally, between 20% and 50% of the time, we would communicate by phone or video, so that you can show me how to do these things.
