Salesforce Project - User emails on accounts

We have multiple users in salesforce. I would like all users OnLY to be allowed to send emails and not from their email that is setup in their user account.

Reason for this is when people reply to their company emails, I dont see it in the activity area in salesforce.

OR
allow all users to send out email from only their email address and not the ability to send out from all users. When customers respond, to the emails, ensure the incoming emails are also saved to activity section in salesforce.
