Design solar powered device using ESP8266 microcontroller

We are looking for Help designing the following:
For measuring data inside a building, we need a ESP8266 powered device, that harvests power through solar panels from ceiling lighting. Ideally, that power is stored in a capacitor. The ESP8266 should remain in sleep mode and only transmit the data one time daily via WIFI. During the day, different data should be collected. For the first units, they should either be logging data from a one-wire sensor or RFID reader, to show time, date and serial number of Ibutton or RFID chip. Also from weight sensors like HX711. Reporting 1-2 times a day is enough, so the ESP would only wake up, store data and go back to sleep until he transmits all data once a day.
The Project should use readily available components on the market (such as NODEMCU rather than own ESP8266 chip on special circuit board) and only require little soldering. Preferably, no specialized circuit board has to be made. Goal is to make it easily assemble by students. If a special circuit board is needed, help will also be necessary to get the pcb produced.
