Linux Help Needed for Mongo Investigation

We are looking to downsize some Mongo instances. In order to do that, we need some Linux help to track down the following information:

-Track down how our MongoDB daemons are run within our servers and document it.
-Stop daemon
-Start daemon
-Watch MongoDB log file until error for stale data appears and note how long this took.
