I am currently using Elasticsearch Service on AWS hosted on N. California region. I am looking for an expert who can help me with the following things.

1) Currently, latency is really high when requests are made from Europe or Asia. What are the ways to improve latency there?
2) Whats the best elasticsearch configuration to pick for my use case as with time, I am going to add more and more data to elasticsearch cluster.
