We need an nginx condition to do the following:

if there is cookie which says: loggedin=1 and display=mobile: the upstream should come from server A.

if there is cookie which says: loggedin=1 and display=desktop: the upstream should come from server B .

If one of these cookies is missing the upstream should come from server C.

Let me know if this is somewhat possible.
