Required Civil Law,Legal Writing,Paralegal Services freelancer for Civil Litigation/Discovery job

We are looking for a paralegal or legal assistant that is familiar with the discovery process. We are a law firm that represent landlords and property owners, with evicting problem tenants. At times these tenants (Defendants) hire defense attorneys that hit us with discovery (i.e., form interrogatories, special interrogatories, requests for admissions, etc.) The turn around time to respond to these discoveries are are between 5 to 10 days. As such, we will need someone that can get to any given job promptly and without delay. We would prefer a bilingual applicant for this job, as many of our client are spanish speaking.
